Summer is in full swing at Beacon Hill-while many people are grilling out or lounging by the pool, we have been busy working to bring you valuable solutions to your clients' environmental insurance needs. With the addition of our new PartnerOne Workers Compensation product and our newly designed website, we continue to strive towards our goal of providing excellent service and great coverage options. Before we get into our insurance news, we'd like to share a fantastic recipe from our very own Shelly Kidwell. This dish is always a hit at our office potlucks and is perfect for a summertime party. Enjoy!
Crockpot Mac & Cheese
(1) 16 oz package of elbow macaroni
(2) Pounds shredded cheddar cheese
(1) Stick of butter
(3-5) Cups Milk or half & half (amount will vary depending on the size of your crock pot)
Salt and pepper to taste
Boil noodles for 10 minutes. Spray inside of Crock pot with cooking spray. Cut butter into pieces; layer noodles, butter and cheese. Top the mixture with a final layer of cheese and salt and pepper. Leave some space at the top of the noodle mixture to add the milk. Pour in milk until even with the top layer. Cook on high for 1-2 hours (check frequently), then reduce heat to low. Continue to cook until all liquid is absorbed and top is browning, approximately 6 hours.
Hazardous Coal Ash Sites: A Serious Environmental Risk
The EPA recently released a list of over 40 "high hazard potential" sites around the country that contain coal combustion residuals, commonly referred to as coal ash. This substance is a product of burning coal and is often stored in containment ponds or dams near electrical utilities. As coal ash leaches into the soil and spills into areas surrounding these facilities, there can be serious ramifications on human health and the environment. These storage ponds hold fly ash, bottom ash, coal slag, and flue gas residues that contain toxic metals such as mercury, arsenic, selenium, cadmium, and lead-all potentially toxic to people and wildlife.
